Can’t find about Reply button {begin composing a reply to this post} specifics.

It is expected (experience from classic forum platforms), that when you reply to post it’s content is cited by default.

Discourse has not?

Nope, in order to quote the post you’re replying to, select the snippet you want to quote, and press the quote reply button which appears above it, like so:
